No-Bake Pineapple Pie

No bake pineapple pie delivers a ton of flavor guaranteed to put smiles on everyone’s face after the first bite! It’s easy to make this no bake pineapple pie with simple ingredients. One of the things I particularly enjoy about it is that it’s an all-season pie.

This is a year-round dessert that the whole family will love. It’s perfect for the holiday table or any other special occasion. And it’s a delicious treat to serve on a hot summer day.

Delicious Pineapple Pie with Cool Whip

This pineapple pie recipe doesn’t require the use of an oven, which is nice. If you’re making a holiday dinner, dessert won’t have to compete with the turkey or ham. And on warm days, you won’t have to heat up the kitchen. That makes this pie the perfect summer dessert. It’s such an easy recipe to whip up when you want a delicious dessert. I used canned pineapple, but if you have fresh pineapple, you may use that.

I love any kind of pineapple dessert. In addition to pineapple pie, I make this super easy pineapple dump cake. The whole thing takes just a few minutes to throw together in a pan. In fact, it’s probably the easiest dessert I make. It’s so delicious with either ice cream or whipped cream on top. I often make whipped cream from scratch with heavy whipping cream and a touch of sugar.

The flavor of pineapple is definitely one I will always love, any season of the year. This pineapple smoothie has pineapple chunks and pineapple juice, making this a wonderfully refreshing treat. Mmm, so good!

Ingredients

You only need a few ingredients to make this pie. And it’s nice that everything is available at any grocery store.

Here is what you’ll need:

  • One 20 ounce can crushed pineapple
  • 8 ounces softened cream cheese
  • 1/2 cup sugar
  • 8 ounces whipped topping (Cool Whip or your favorite generic brand)
  • 1 prepared graham cracker crust

I used a pre-made graham cracker crust. However, you can crush your own graham crackers. Either way, the graham cracker pie crust adds the perfect foundation to the pie. If you make your own homemade graham cracker crust, put a sleeve of graham crackers in your food processor. Process until you have crumbs. 

Then add a stick of melted butter. Process again to mix it. Press the crust into a pie plate. Now you have the pie shell. If you prefer, you can make this with Nilla wafers instead of graham crackers. It’s good either way. Or you can use crushed ginger snaps. One of my readers said she did that, and it was amazing. I haven’t tried that yet, but it sounds really good to me. I used granulated sugar, but you can use powdered sugar if you prefer.

Preparation

The first thing I like to do is assemble all of my ingredients to make sure I have everything I need. You’ll also need a large bowl and a mixer. I used a hand mixer, but you can use a stand mixer if you prefer. An electric mixer makes it easy to incorporate the sugar into the cream cheese. You’ll also need a large spoon. A spatula is optional. And of course, you’ll need a pie server after it’s done.

How to Make a No Bake Pineapple Pie

This is sort of an old school recipe. However, I’ve spoken to a lot of people who have never tried it.

First of all, drain the pineapple. It has to be completely drained. If there’s any juice floating around, the pie won’t set. I use a spoon to press it against the colander.

Combine the softened cream cheese and sugar in a large bowl.

Mix it thoroughly with your electric mixer. Make sure you mix it really well to prevent clumps of sugar from settling in one spot. Scoop out a couple tablespoons of the drained pineapple and set that aside.

Add the majority of the pineapple to the cream cheese mixture. Stir it well to distribute the pineapple.

Now scoop about 2/3 of the whipped topping into the bowl. Fold it into the cream cheese and pineapple mixture. Don’t stir too vigorously, or the whipped topping might lose its fluffiness.

Pour the mixture into the prepared pie crust. Spread the pineapple pie filling evenly.

Top the mixture with the remaining 1/3 of the whipped topping.

Now sprinkle the pineapple that you set aside over the top of the pie to garnish. Or if you have pineapple slices, you can use those instead. There’s no wrong way to garnish this pie. You can also add maraschino cherries to make it even more colorful. I didn’t have any, or I would have done that. Just make sure to pat the cherries dry, or the color will bleed onto the pie.

Place the pie in the refrigerator and leave it for a couple of hours to set. I prefer to let it set longer so that it’s easier to cut.

How to Keep Leftover Pineapple Pie

If you’re serving a small group of people, there’s a good chance you won’t have any leftover pie. However, if there is any left, it will be good in the refrigerator for up to 4 days. I don’t typically freeze cream pies because sometimes the texture will change. However, if you choose to freeze it, put it in an airtight container first to prevent freezer burn.

Ingredients

  • 20 ounce can crushed pineapple
  • 8 ounce package cream cheese, softened
  • 1/2 cup sugar
  • 8 ounce container whipped topping (Cool Whip or generic)
  • Prepared graham cracker crust

Instructions

  1. Drain the pineapple. Make sure it is completely drained, or the pie won’t set and you’ll have a sloshy mess.
  2. In a large bowl, combined softened cream cheese and sugar. Mix thoroughly. I used a hand mixer.
  3. Add all but 2 tablespoons of drained pineapple and stir.
  4. Gently fold in about 2/3 of the whipped topping.
  5. Pour the mixture into the pie crust. 
  6. Spread the remaining whipped topping over the pie filling.
  7. Sprinkle the 2 tablespoons of crushed pineapple over the whipped topping.
  8. Place in the refrigerator for at least a couple of hours to set.
