Hearty Soup Recipe

This beef and mushroom soup is the perfect recipe when you need a comforting yet easy meal. Loaded with beef, mushrooms, and a flavorful broth, it’s delicious and hearty enough to serve as a main dish on a busy weeknight. Serve it with a side of crusty bread to complete the meal!

Ingredients

All of the things you need for this dish are easy to find at any grocery store. Here’s a list:

  • Diced sirloin (or any of your favorite tender cuts of meat)
  • Diced onion (either fresh or frozen)
  • Sliced fresh mushrooms
  • Diced bell pepper (either fresh or frozen)
  • Butter
  • Beef broth or bone broth
  • Water
  • Onion soup mix

Directions

Start out by melting the butter in a large soup pot over medium heat. After it melts, add the diced onions and mushrooms. Stir the vegetables as they cook, until the onions become translucent and the mushrooms soften. This takes about 3 or 4 minutes. Turn the heat to simmer

Next, it’s time to brown the beef. While the vegetables are simmering, heat a large skillet over medium-high heat. Add the diced sirloin and cook until all of the pieces are browned on all sides. This helps to lock in the flavor and adds a rich and savory taste. After the beef is browned, transfer it to the pot with the onions and mushrooms.

Now add the bell peppers, beef broth, water, and onion soup mix to the pot. Stir everything together until all of the ingredients are well combined.

Turn the heat up to medium-high and bring the soup to a gentle bubble, stirring every couple of minutes to make sure nothing sticks to the bottom of the pot. After it bubbles, turn the heat down to low. Simmer for another 5 minutes.

Tips and Variations

If you like a creamy mushroom soup, add about 1/2 cup of heavy cream or sour cream. This adds extra rich flavor.

You can also add some chopped carrots, celery, spinach, or zucchini. I would add any additional veggies with the mushrooms.

Add other flavors to your soup, such as teriyaki sauce, chili sauce, or even Italian seasoning. If you’re not sure of something, try adding the extra flavor to a small amount and taste it before putting it into the whole pot of soup.

You can also make this delicious soup in your slow cooker. To do this, first brown the beef and then add all of the other ingredients to the slow cooker pot. Cook on low for 5 hours.

Ingredients

Instructions
