Step-by-Step Instructions

Preheat the oven to 350ËšF and grease the bottom of a small pan or casserole dish.

Add the drained Rotel, corn, and half of the cheddar cheese. Stir until it’s well mixed.

Remove the dish from the oven and add the remaining shredded cheese to the top. Bake for another 5 minutes. The cheese should be all melty and bubbly.

Remove from the oven and sprinkle the chopped chives over the top.

Ingredients

  • 2 cans corn, drained (15 oz. each can), drained
  • 8 ounces cream cheese, softened
  • 1 can Rotel, drained
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped chives

Instructions

    1. Preheat oven to 350Ëš F. Grease the bottom of a 2 quart pan or casserole dish.
    2. In a medium bowl, stir the softened cream cheese until it’s smooth.
    3. Add the Rotel, drained corn, and half of the shredded cheddar cheese.
    4. Stir until well mixed. Pour the mixture into the casserole dish.
    5. Place in the oven and bake for 25 minutes.
    6. Sprinkle the remaining cheese over the top and bake for another 5 minutes or until the cheese is melted.
    7. Remove from the oven and sprinkle the chopped chives over the top for garnish.
