Sheet Pan Shrimp and Asparagus Dinner

I love this sheet pan shrimp and asparagus sheet pan dinner when I want a quick, easy, and delicious meal that just happens to be low-carb. With just a few ingredients and very little prep time, you can have a nutritious and satisfying dinner on the table in less than 30 minutes.

Quick and Delicious Meal

On busy weeknights, I’m typically not excited about standing in the kitchen for a long time. So I generally make dinners that are super fast and just as easy. This dinner is loaded with flavor, as is this sheet pan sausage and vegetable dinner.

Ingredients

  • 1 pound fresh asparagus, tough ends cut off
  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons avocado oil
  • 2 tablespoons Old Bay Seasoning

Directions

Start by preheating your oven to 400 degrees Fahrenheit. This temperature is perfect for roasting both the shrimp and asparagus, so that they cook evenly and develop a nice, slightly caramelized exterior.

Coat a baking pan with avocado oil. This not only prevents the shrimp and asparagus from sticking but also adds a rich, nutty flavor that complements the seafood perfectly.

Next, prepare your asparagus by steaming it in about 1/2 inch of water in a pot over high heat. Steam the asparagus for approximately 2 minutes. The goal is to soften it slightly while maintaining its bright green color and a bit of crunch. It should be firm but not stiff.

After steaming, remove the asparagus from the pot and place it on paper towels to dry. This step is important so that the asparagus roasts properly in the oven instead of steaming further. Once dry, transfer the asparagus spears to the prepared sheet pan, spreading them out evenly.

Now, it’s time to add the shrimp. Arrange the peeled and deveined shrimp around the sheet pan, making sure they’re spread out so they cook evenly. The shrimp will cook quickly in the hot oven, absorbing the flavors of the seasoning and the avocado oil.

Turn the asparagus and shrimp over to coat them with the avocado oil. This ensures they’re evenly coated and helps the seasoning stick. Then, generously sprinkle the Old Bay seasoning over the top.

Place the sheet pan in the preheated oven and bake for approximately 8-10 minutes, or until the shrimp are fully cooked. You’ll know the shrimp are done when they turn a beautiful pink color and are firm to the touch. Be careful not to overcook them, as they can become tough.

Serve Hot

Once done, remove the sheet pan from the oven and serve immediately. This dish is perfect on its own for a low-carb meal. However, if you’re in the mood for some extra carbs, it pairs wonderfully with a serving of rice or a side of crusty bread.

Ingredients

  5. Sprinkle the Old Bay seasoning over the top of the asparagus and shrimp.
  6. Bake in preheated oven for approximately 8-10 minutes or until the shrimp are done.

Notes

This is a low-carb meal when served alone. For those who enjoy more carbs, serve over rice or with a side of bread.

If you are cooking for 2, simply cut the amount of each ingredient in half. For more than 4 people, double the recipe.
