Flavorful but Easy Main Dish

Thai chicken is a simple, flavorful dinner that brings a taste of Thailand into your home. It’s easy enough for a weeknight meal, but it’s also delicious enough to impress guests. With just a few easy-to-find ingredients, you can create something that tastes like it took hours to prepare. And it only takes a few minutes.

Ingredients

  • Boneless skinless chicken breasts
  • Coconut milk (unsweetened)
  • Ground ginger
  • Black pepper
  • Avocado oil
  • Greens (optional)
  • Red bell pepper (optional)
  • Peanuts, coarsely chopped (optional)

Optional Ingredients

You can add more ingredients to kick up the flavor of this delicious dish. Here are a few you might want to try:

  • Cayenne pepper
  • Chili powder
  • Onion powder
  • Garlic powder

Directions

In a small bowl, combine the coconut milk with the ginger and black pepper. Stir until it is well mixed. This is the sauce that gives it the Thai flavor.

Next, heat the oil in a large skillet over medium heat. After the oil is hot, carefully add the chicken breasts. Be careful so you don’t splatter yourself. Cook the chicken for about 10 minutes, flipping halfway through to get even browning. Check the temperature of the chicken. It needs to be 165˚ F at the thickest part.

After chicken is thoroughly cooked, transfer it from the skillet to a plate. Set it aside. I like to cover it to keep it warm while I cook the sauce.

If you’re planning to add the bell pepper and greens, now is the time to add them. Simply toss them into the skillet and sauté for a minute. Don’t overcook, or the vegetables will be soggy.

Now pour the coconut milk mixture into the skillet. Simmer for about 2 minutes, allowing the flavors to blend and the sauce to heat up.

Finally, return the chicken to the pan and spoon the sauce over it until it is well coated. Serve the chicken and veggies over a bed of fluffy white rice or this onion seasoned rice. It’s also good on fried rice.

Make this dish even more appealing by sprinkling it with chopped peanuts. Or if you want to pass up the peanuts, sprinkle with sesame seeds.

Ingredients

Instructions

  1. In a small bowl, combine coconut oil, ginger, and pepper. Set it aside while you cook the chicken.
  2. Heat oil in a large skillet, over medium heat.
  3. Carefully add the chicken and cook for about 10 minutes, turning halfway through the process. Make sure the chicken is fully cooked to at least 165˚ F in the thickest part.
  4. Remove the chicken from the skillet.
  5. If you’re adding greens and bell pepper, add them to the skillet.
  6. Pour the sauce into the skillet and cook for about 2 minutes. 
  7. Place the chicken back in the skillet and spoon the sauce over it.
  8. Serve over rice. Sprinkle the peanuts over each serving.

Notes

  • For even more flavor, add a couple of tablespoons of peanut butter to the sauce before cooking it.
  • If you don’t want to add peanuts, try sesame seeds instead.
