Easy Funfetti Cookies with Cake Mix (Only 3 Ingredients)
Cookies That Taste Like Birthday Cake
Funfetti cake mix cookies are a deliciously festive sweet treat or dessert that will surely put smiles on everyone’s face. All you need are a cake mix, a couple more basic ingredients, and a tiny bit of effort to have a big batch of homemade cookies!
These are delicious cookies to serve with coffee or any other favorite beverage! I’ve made cookies from cake mixes for decades, and people have consistently told me that they can’t tell the difference between them and “scratch” cookies.

I loved baking cookies for my children when they were younger. Not only did they love the wonderful aroma when they walked in the door, they eagerly sat down at the table and told me about their day while enjoying cookies and milk.

Ingredients You’ll Need
- Funfetti cake mix (15-16 ounce box)
- Eggs
- Softened butter
- Frosting (optional)

How to Make Funfetti Cookies
Preheat your oven to 350Ëš F and line a baking sheet with parchment paper to prevent sticking.
In a large bowl, cream the softened butter using a hand mixer or stand mixer until it’s smooth and fluffy. Add the eggs to the butter and continue mixing until well combined.



Pour the Funfetti cake mix into the bowl with the butter and eggs. Mix everything together until all ingredients are fully incorporated.
Be careful not to over-mix; just blend until the dough comes together.


Using a tablespoon or cookie scoop, scoop out portions of the dough and place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.


Flatten each ball slightly with the back of a spoon. They should be about 1/2 to 3/4 inch thick.
Don’t flatten them out too much because they will spread out as they cook.


Slide the baking sheet into the preheated oven and bake the cookies for approximately 10 minutes, or until the edges turn a light golden brown.

Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.

For an extra sweet touch or for a special occasion, consider frosting these cookies with your favorite homemade or store-bought frosting. Sprinkle some colorful jimmies or sprinkles on top to enhance their festive appearance.

Gluten-Free Version
I’m not able to eat cookies with gluten, so I have a work-around. If you want to make these cookies gluten-free, start out with either a white or yellow gluten-free cake mix. Or you can start with this sugar cookie recipe.
Add 1/2 cup of your favorite sprinkles to the mix. All of the rest of the directions are the same as for the regular version.

These colorful funfetti cake mix cookies are easy to make, and they're so fun to eat!
Ingredients
- 1 box funfetti cake mix (15-16 ounce box)
- 2 large eggs

Instructions

- Bake for about 10 minutes or until the edges are a light golden brown.Â
- Remove from the oven and allow them to cool for a few minutes. Then transfer them to a cooling rack.
- After they reach room temperature, they’re ready to enjoy!
Notes
- Don’t put the cookies too close together on the pan, or they’ll spread into each other.
- If you want to frost them, use your favorite frosting, either from a can or homemade. You can also add sprinkles (or jimmies, depending on what you call them) for an extra sweet and festive touch.
- For a gluten-free version of this cookie, start out with a gluten-free cake mix, either white or yellow cake. Add 1/2 cup of colorful sprinkles. Follow the rest of the recipe as you would for the regular version.
