Gooey Chocolate Chex Bars

Gooey chocolate Chex bars can satisfy a sweet tooth like nothing else. In fact, you only need a couple of bites to satisfy a sugar craving.

One of the things I like to do is test my recipes on people of different ages. My granddaughters are great taste-testers, and so are the teenage boys in my neighborhood.

I even offer treats to people walking their dogs past my house, and most of them are willing to at least try.

Options for Gooey Chocolate Chex Bars

You can make these bars with whatever Chex cereal you have on hand. This time I used Honey Nut Chex, and the bars were super sweet.

I prefer them with Corn Chex. In fact, they have a hint of s’mores flavor when they’re less sweet. However, most of the people who tried them like the ones with the Honey Nut Chex.

If you’re able to tolerate gluten, you might want to try using the Wheat Chex. Or maybe you can mix several different flavors of the cereal for a completely different taste sensation.

Versatile Chex Cereal

One of the many things I love about Chex (besides eating it with a little bit of milk for breakfast) is that it’s so versatile.

Another thing I appreciate about Chex is the fact that most of the varieties are gluten-free. We go through a lot of Corn Chex and Rice Chex, and in this case, the Honey Nut Chex.

Besides these Gooey Chocolate Chex Bars, my favorite item made from Chex is the Chex party mix. I make that at least a couple times a month. It’s the perfect snack for playing board games or movie night.

Another thing I often do is use crushed Chex cereal instead of breadcrumbs. I used the canned fried onions for this mac and cheese casserole, but there are times when I use Corn Chex instead.

It provides the same crunch but gives it a slightly different flavor. You can also top this chicken rice casserole with crushed Chex cereal.

Ingredients

In addition to the Chex cereal, you’ll need chocolate chips, marshmallows, and a little bit of butter. I like semi-sweet chocolate chips, but you can use milk chocolate if you prefer.

Directions

Spray the bottom of a 9″ x 13″ baking pan with nonstick cooking spray before pouring the Chex cereal into it. Spread them out and make them as level as possible.

Melt the butter in a large pan. Add half of the marshmallows and stir until they melt.

Add the Chex cereal and stir until it is coated, being careful not to break the cereal. Pour this into the pan and spread it out.

Sprinkle the remaining marshmallows and the chocolate chips over the Chex. Using any large flat surface, press the marshmallows and chocolate chips down until they stick to the Chex. I used the backside of a spatula.

Bake this for about 20 minutes, until the marshmallows start to turn a golden brown around the edges. The chocolate chips will melt down into the marshmallows, making it even gooier … and tastier.

Allow it to cool before cutting it into squares.

Gooey chocolate Chex bars only require a few ingredients and are easy to make.

Gooey Chocolate Chex Bars

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 4 cups of any flavor of Chex cereal
  • 1/2 stick of butter
  • 1 cup of chocolate chips (semi-sweet or milk chocolate)
  • 2 cups of mini marshmallows

Instructions

  1. Preheat oven to 350 degrees. Spray the bottom of a baking pan with nonstick cooking spray.
  2. In a large skillet, melt the butter on medium-high. Add half of the marshmallows and stir until they are melted.
  3. Add the Chex cereal to the marshmallow mixture and stir until the cereal is coated. Spread it evenly into the pan.
  4. Sprinkle the marshmallows and chocolate chips over the cereal mixture and press them down to level it out. Put this in the oven and bake for approximately 20 minutes or at least until the marshmallows start to brown.
  5. Remove from the oven and cool for about 15 minutes. Cut it into 12 rectangles or squares.

      1. Hi Karen. Yes, you can make them up to a couple of days in advance. Make sure the container is airtight. The refrigerator has a tendency to dry things out. I hope you enjoy them!
