This nutty green pea salad recipe is easy, quick, and absolutely delicious! I love how every single bite delivers a wonderful blend of textures and flavors that make me want to go back for seconds. Although I absolutely love this chickpea salad, there’s just something special about a nutty pea salad.
Versatile Salad Recipe
This yummy pea salad is perfect for a picnic, a dinner party, or even as a light lunch. All of the ingredients are easy to find at any grocery store.
Ingredients
- 1 can peas and carrots, drained
- 1 can chickpeas, drained and rinsed
- 1/4 cup chopped onion (red onion or white onion)
- 1/2 cup chopped celery
- 1/2 cup cashews (or your favorite nut)
- 2 tablespoons mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup plus 1 tablespoon bacon bits
- 1/2 teaspoon salt
Directions
In a medium bowl, combine mayonnaise, garlic powder, onion powder, and salt. Mix well until the seasonings are fully incorporated into the mayonnaise.
Add peas and carrots, chickpeas, onion, celery, 1/4 cup bacon bits, and cashews to the bowl. Carefully stir the mixture, ensuring the peas stay intact to maintain the salad’s appealing texture.
Transfer the mixture to a serving bowl and sprinkle the remaining tablespoon of bacon bits over the top for a crunchy garnish. I actually like it as-is, but you can also add paprika, parsley, or any other garnish that makes you happy.
Refrigerate the salad for at least 1 hour before serving. This allows the flavors to meld together, enhancing the overall taste.
Wonderful Flavors and Variety of Textures
Something I love about this yummy pea salad is how each bite is different. I enjoy the sweetness of the vegetables, combined with the crunch of the onions, celery, and nuts. And the smoky flavor of the bacon sends my taste buds into orbit! And of course the seasoned mayonnaise holds it all together.
