Ingredients
- 1 pound beef cut into bite-size pieces
- 2 zucchinis cut into bite-size rounds
- 1/4 cup of butter (1/2 stick)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Directions
I love how easy this dinner is. And you can enjoy it without a starchy base for a low-carb, keto-friendly meal. Or serve it on a bed of potatoes or rice.
Before you begin, melt the butter in the skillet. First, brown the beef, season it, and set it aside. This step only takes about 5 minutes.
Remove the beef and put the cut zucchini in the skillet. Brown the zucchini on both sides, seasoning it as you go. Do this until the pieces turn golden brown, for about 5 minutes.
Turn down the heat. Return the beef to the skillet and put the lid on top. Now cook it for another 10 minutes or until the zucchini is tender.

Sautéed Beef and Zucchini
This delicious beef and zucchini dinner is low-carb, making it an ideal option for those following keto.
Ingredients
- 1 pound beef cut into bite-size pieces
- 2 medium zucchinis cut into bite-size rounds
- 1/4 cup butter (1/2 stick)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Melt the button on medium-high in a large skillet
- Add the beef to the skillet and cook until brown, turning to brown all sides. Sprinkle half of the garlic powder, onion powder, salt, and pepper over the top. Transfer the browned beef to a plate.
- Add the cut zucchini to the skillet, turning to brown all sides. Sprinkle the remaining garlic powder, onion powder, salt, and pepper over the top.
- Put the beef into the skillet with the zucchini. Gently toss to mix.
- Turn the heat to medium-low. Cover and cook for an addition 5-10 minutes, until the zucchini is tender.
- Serve hot.
