Everything Garden Salad

This everything garden salad is exactly as the name implies. It’s everything from the garden, along with a few things from the pantry. I love making this salad because it’s flavorful, interesting, and satisfying. You can also switch out some of the ingredients, depending on what you have in your garden or what’s on sale at the grocery store.

This is a delicious salad to serve with this garlic lemon chicken or this budget-friendly but fabulous tuna casserole. With this garden salad, you don’t need to offer a whole lot of sides.

Fresh and Flavorful Side Dish

Although I enjoy eating this salad on its own or with a protein added, it’s also a delicious side dish. If you have other veggies or even fruit, feel free to add it! I’ve added olives, capers, and blueberries when I have them.

Ingredients

  • 2 large cucumbers, sliced into half-rounds
  • 3 stalks of celery, sliced thin
  • 1 cup cherry or grape tomatoes, cut in half
  • 2/3 cup red kidney beans, rinsed and drained
  • 2/3 cup whole kernel canned corn, drained
  • 1/4 cup chives, finely chopped
  • 1/3 cup salad dressing (balsamic vinaigrette, Italian, or Greek)

Directions

Prepare the vegetables. Begin by slicing your cucumbers into half-rounds. The crunch of cucumbers is the foundation of this salad, delivering a refreshing bite that pairs perfectly with the other ingredients. Next, slice the celery thinly.

Celery adds a satisfying crunch and a mild flavor that enhances the freshness of the salad. Finally, halve the cherry or grape tomatoes. Their sweetness will complement the other ingredients beautifully, adding a juicy burst of flavor to each bite.

Combine the ingredients. In a large mixing bowl, combine the sliced cucumbers, celery, and halved tomatoes. These vibrant vegetables create a colorful base for the salad. Now, add the rinsed and drained red kidney beans, followed by the drained whole kernel corn.

The beans bring a hearty texture and protein, while the corn adds a touch of sweetness and color. Sprinkle the finely chopped chives over the salad for a subtle onion-like flavor that ties everything together.

Add the dressing. The final touch is the salad dressing. Whether you prefer the tangy sweetness of balsamic, the zesty notes of Italian, or the bold flavors of Greek dressing, any of these will work wonderfully with this salad. My favorite is balsamic vinaigrette. Drizzle the dressing evenly over the top of the salad.

Toss and serve. Using tongs or a couple of spoons, gently toss the salad to make sure all the ingredients are well coated with the dressing. I prefer using tongs. And since I use them for so many different things, I have a bunch of them in all sizes. Serve immediately for the best taste and texture.

This everything garden salad is incredibly versatile. I enjoy it as a light lunch, a side dish for dinner, or even as a refreshing snack.

I find that it’s a great way to include more vegetables into my diet, and it pairs well with a variety of main courses. Anyone who knows me well knows how much I enjoy adding a lot of color to my plate. And this salad does just that!

Refreshing and delicious, this garden salad makes the perfect side dish for any meal.

Ingredients

  • 2 large cucumbers, sliced into half-rounds

  2. Add the beans, corn, and chives. Using tongs or a couple of spoons, mix well.
  3. Sprinkle your favorite salad dressing over the top and mix again.
