When I went through all the ways I make zucchini, I thought about what made some my favorites. It basically boiled down to just a few things.
First, it had to taste good. Secondly, the dish had to be relatively easy to make. And finally, it had to be family approved.
In the past, my family consisted of my husband, two daughters, and myself. Occasionally, I fed friends, boyfriends, our parents, and other folks we enjoyed holiday dinners with.
Now that it’s just my husband and me, I’ve had to learn how to scale the size of the dish so we didn’t wind up with too much.
