Using a Box Mix Shortcut

If you’re looking for a bright and cheerful dessert that’s super easy, this lemon loaf cake is what you want! It has that fresh, sunshiny favor that reminds me of a warm summer afternoon. And it’s super easy since the recipe starts with a box of cake mix and some instant pudding. This is such a simple, delicious treat that you can whip up in less than an hour.

Ingredients

Here’s what you’ll need:

  • Yellow cake mix (15 ounce package)
  • Instant lemon pudding mix (3-1/2 ounce package)
  • Melted butter (or avocado oil if you prefer)
  • Plain Greek yogurt (full fat adds the richest flavor)
  • Water
  • Eggs
  • Juice from 1 lemon (optional – adds an extra lemony zing)

How to Make This Delicious Dessert

Before you start mixing anything, preheat your oven to 350˚ F. Go ahead and grease and flour the bottom of your loaf pan (or pans). That step is important because it helps the cake pop out of the pan when it’s done. You can use either one 9” x 5” pan or two 8” x 5” pans.

Dump all of the ingredients into a large mixing bowl. Stir until everything is mixed and the batter is smooth. You can use an electric mixer or a sturdy spoon for the job.

Next, pour the batter into your pan (or pans). Smooth out the top so that it’s level. Pop it into the oven and bake. For the larger loaf, bake for about 50 minutes. For the two smaller loaves, check on them at around 30-35 minutes.

Try the old-fashioned toothpick test. Simply poke the center of the loaf with a toothpick. If it comes out clean or with a few cake crumbs, it’s ready. If there’s any wet batter clinging to the toothpick bake for another 5-10 minutes.

How to Serve

Allow the loaf to cool to room temperature before slicing. I enjoy this lemon loaf cake as-is. However, if you want to impress someone or make your family extra happy, drizzle a simple glaze over the top. This glaze is easy to make with powdered sugar and lemon juice.

Ingredients

  • 1 box yellow cake mix (15 ounce package)
  • 1 box instant lemon pudding mix (3-1/2 ounce package)
  • 1/2 cup melted butter (or avocado oil)
  • 1/3 cup plain Greek yogurt (full fat)
  • 3 eggs
  • 1 cup water
  • Juice from 1 lemon (optional for extra lemony flavor)

Instructions

  1. Preheat oven to 350˚ F. Grease and flour the bottom of 1 large 9” x 5” loaf pan or 2 smaller 8” x 4” loaf pans.
  2. Combine all of the ingredients in a large mixing bowl. Stir until all of the ingredients are well mixed.
  3. Pour the batter into the loaf pan (or loaf pans) and bake. If you’re using a larger loaf pan, bake for 50 minutes. If you’re using 2 smaller loaf pans, bake for 30-35 minutes.
  4. Insert a toothpick and pull it out to test for doneness. If it comes out clean or with crumbs, it’s ready. However, if there is still wet batter on the toothpick, bake for another 5-10 minutes.

Notes

If you want a glaze to drizzle over the top, mix powdered sugar with lemon juice and stir until it is smooth. Drizzle it over the top of the loaf cake before slicing.
