Delicious and Healthy Side Dish
I love air fryer roasted mixed vegetables because they provide a lot of nutrients with very little effort. This easy recipe is perfect for busy weeknights when you want a healthy side dish without spending to much time in the kitchen. Add just a little oil and a few simple ingredients, I enjoy creating a flavorful vegetable medley that pleases even the pickiest eater.

I typically use a combination of frozen and fresh vegetables. However, before I add frozen vegetables, I like to thaw them. You can also double this recipe, but use a large mixing bowl if you do. In order to prevent crowding when I make extras, I will cook the vegetables in batches.
It helps to know how hot your air fryer cooks. Mine is pretty average. If you’ve had yours for a while, you probably know. Adjust the air fryer time and temperature as needed.
Ingredients


- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cup broccoli (fresh or frozen, thawed)
- ½ cup green beans (fresh or frozen, thawed)
- ½ cup tomatoes, cut into bite-size pieces
- 1 tablespoon olive oil (or olive oil spray)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
Directions
Start by cutting all the fresh vegetables into bite-size pieces. If using frozen vegetables, make sure they’re thawed and patted dry to remove excess moisture.

In a large mixing bowl, combine the vegetables. Drizzle olive oil over them, then sprinkle with garlic powder, onion powder, salt, and black pepper. Toss gently to coat all pieces evenly.


Transfer the seasoned vegetables to the air fryer basket. Set the air fryer to 400°F and cook for 3 minutes. Remove the basket, shake or turn the vegetables, and cook for another 3 minutes.

Repeat this process until the vegetables reach your desired doneness. The ones I cooked for this post were done after 6 minutes.

- Swap in your favorite vegetables like red bell peppers, sweet potatoes, butternut squash, or brussels sprouts for a custom mix.
- Choose firm vegetables with similar cooking times for even roasting.
- Add Italian seasoning, smoked paprika, or a dash of red pepper flakes for extra flavor.
- Sprinkle shredded or grated parmesan cheese over the finished vegetables for a cheesy finish.
- Drizzle with balsamic vinegar after cooking for a tangy touch.

I’ve found that these roasted mixed vegetables go with almost any main dish. And they are so easy to make without too much fuss. Sometimes I even make extras to serve the next night.
Air Fryer Roasted Mixed Vegetables

This air fryer roasted mixed vegetable dish is the perfect side for almost any meal.
Ingredients
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cup broccoli (fresh or frozen, thawed)
- 1/2 cup green beans (fresh or frozen, thawed)
- 1/2 cup tomatoes, cut into bite-size pieces

Instructions
- Cut all of the vegetables into bite-size pieces and put in a medium mixing bowl
- Drizzle olive oil over the vegetables.
- Sprinkle the garlic powder, onion powder, salt, and pepper over the vegetables. Gently toss.
- Pour the vegetables into the air fryer basket.
- Cook for 3 minutes at 400˚ F. Remove basket and shake or turn contents.
- Return to the air fryer for another 3 minutes at 400˚ F. Repeat this process until you reach the desired doneness.
Notes
- You may add more vegetables or swap out anything you want.
- Some air fryers cook hotter than others. If this is the case with yours, turn the temperature down to 375˚ F.
