Parmesan Roasted Carrots
If you like crispy textures, then you probably appreciate roasted vegetables. I especially like my carrots roasted because it brings out their sweet flavor.
I made these in the traditional oven, but you can also cook them in your air fryer if you have limited time. Follow these oven times vs. air fryer times to get the best results.
Ingredients
You only need a few ingredients, some that you may have in your pantry. Here is what you’ll need:
- Carrots
- Parmesan cheese (shredded or grated)
- Olive oil
- Salt (Himalayan salt, kosher salt, or sea salt)
- Garlic powder
- Onion powder
- Thyme
- Parsley flakes (optional for garnish)

I’ve played around with this recipe and added different seasonings. If you’re an adventurous cook, try some of your own. I’ve added cinnamon and cayenne, and they came out absolutely delicious. However, that might be a tad too spicy for young children.

I’ve made these carrots so many different ways, and we’ve enjoyed them every time. However, I keep going back to the original because it’s so easy and tasty. In fact, of all my recipes to make roasted parmesan carrots, this is my favorite. I like carrots, but after cooking them this way, I can honestly say I love them.
Tools You’ll Need to Make Roasted Parmesan Carrots
Gather all of your ingredients to make sure you have everything. You’ll also need a bowl, a knife, a cutting board, a spoon for stirring, a baking sheet, and some parchment paper. If you’re grating your own cheese, you’ll need a cheese grater or food processor with a grating attachment.
How to Make Roasted Parmesan Carrots
Preheat your oven to 400 degrees F. Cover the baking sheet with parchment paper or lightly grease it.
Slice all of the carrots lengthwise into uniform carrot sticks. I used baby carrots, but you can use the regular size carrots and cut them into thirds.
Put the carrots in the bowl and add the olive oil, salt, garlic powder, onion powder, and thyme. Toss the ingredients until the carrots are well coated.
Pour the carrots out onto the parchment paper lined baking sheet and spread them into a single layer. Bake for 15 minutes. Pull them out of the oven and sprinkle the shredded or grated parmesan cheese over the top. Gently toss to coat the carrots with the cheese. Garnish with parsley flakes. Serve hot.

Roasted Parmesan Carrots
Elevate any meal by adding these delicious but easy roasted parmesan carrots.
Ingredients
- 1 pound fresh carrots
- 1/4 cup grated parmesan cheese (or shredded)
- 1 tablespoon olive oil
- 1/2 teaspoon salt (sea salt, Himalayan salt, or kosher salt)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon thyme
- 1/4 teaspoon parsley flakes
Instructions
- Preheat oven to 400˚ F. Place parchment paper on a baking sheet.
- Slice the carrots lengthwise and put in a bowl.
- Add olive oil, salt, garlic powder, onion powder, and thyme. Toss until all of the carrots are evenly coated.
- Spread carrot slices out on the baking sheet. Place in the hot oven and bake for 15 minutes.
- Remove from the oven and sprinkle the grated or shredded parmesan cheese over the top.
- Gently toss until the carrots are coated in the cheese.
- Garnish with parsley flakes and serve.
