Slow Cooker Vegetable Stew
This hearty vegetable stew is easy to make and perfect for weeknight dinners.
Ingredients
- 2 carrots, sliced into 1/2” rounds
- 2 stalks of celery, sliced into 1/2” pieces
- 1 zucchini, sliced into bite-size pieces
- 1 cup frozen cut green beans
- 2 medium potatoes, sliced into bite-size pieces
- 1 small onion, diced
- 1 can crushed tomatoes (15 ounce can)
- 1 can rinsed and drained white beans (15 ounce can)
- 1 cup vegetable broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Herbs of your choice for garnish (optional)
Instructions
- Combine all of the ingredients in the slow cooker.
- If you like a thicker broth, reserve 1/2 can of the white beans. Mash them and add them to the pot.
- Stir to mix all of the ingredients.
- Cook on low for 6-8 hours or until all of the vegetables are tender.
