Homemade Turkey Noodle Soup


Easy Recipe for Leftover Turkey

If you like turkey noodle soup, you’ll love this super easy recipe that I follow whenever I have leftover turkey. I love how it warms me up from the inside and delivers such wonderful flavor! And you save money by using leftovers and other ingredients that you probably have on hand!

Ingredients

  • 2 cups of leftover turkey (shredded or diced)
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 small onion, diced
  • 4 cups turkey broth (or chicken broth), either homemade or pre-packaged
  • 1-1/2 cups noodles (egg noodles or whatever pasta you prefer)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Seasoned salt to taste
  • Parsley for garnish (optional)

Directions

This yummy turkey noodle soup is super easy to make. I like to serve it with either this southern-style cornbread or this soft and fluffy cloud bread.

Here is how I make it:

Start with the Broth


Pour 4 cups of turkey or chicken broth into a medium to large saucepan. Bring it to a boil and toss in diced carrots, celery, and onion. I use these veggies because they add flavor, color, and nutrition, making the soup both beautiful and tasty.

Add the Turkey and Noodles

Once the broth and vegetables come to a boil, reduce the heat to medium-low. Now add the turkey, along with 1 cup of noodles. Egg noodles are a traditional choice, but if I don’t have them, I use whatever is in my pantry. The noodles will absorb the delicious broth as they cook, becoming perfectly tender.

Season to Taste


I like to add more flavor with garlic powder and onion powder. If you prefer a little extra kick, seasoned salt can be added to taste. The best part? You can easily adjust the spices to suit your preferences. In fact, you can add other spices, such as bay leaves or even sage. Try a small amount first, though, to make sure you like it.

Simmer Until Tender


Let the soup simmer gently until the vegetables and noodles are tender, about 10-15 minutes. This gives the flavors time to meld together, creating a soup that is warm and comforting.

Garnish and Serve


For a fresh touch, I like to garnish with parsley before serving. Serve the soup hot with some crusty bread for dipping or enjoy it on its own.

Ingredients

  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 small onion, diced
  • 4 cups turkey broth (or chicken broth)
  • 1-1/2 cups noodles (egg noodles or whatever pasta you prefer)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • Parsley (optional)

Instructions

  1. Pour the turkey broth into a medium to large saucepan. Add the carrots, celery, and onions, and bring to a boil.
  2. Turn the heat down to medium-low. Add the turkey, egg noodles, garlic powder, onion powder, and salt (optional).
  3. Cook until the vegetables and noodles are tender.
  4. Garnish with parsley if you like.
  5. Serve hot.
