Flavorful Side Dish
This garlic zucchini Parmesan is a delicious side dish that adds a boatload of flavor to any meal. I like to serve it with beef, pork, chicken, or seafood. And it’s especially good with a holiday meal!
Easy Stovetop Side Dish
I make quite a few side dishes in the oven. But there are times when I just want something quick that I can cook on top of the stove. Zucchini is very versatile, so I add it to quite a few recipes, including this zucchini and squash salad.
Ingredients
You obviously need zucchini, garlic, and Parmesan cheese based on the name of the dish. But you need to add more to pull it all together. Although you can make this however you like, I add basil, olive oil, salt, and pepper. Other ingredients you might like include oregano, thyme, and onions.
If you want this to be a complete meal, you can add a protein such as chicken or tuna. I like it with shredded pieces from one of the rotisserie chickens at the Costco deli.

Directions
You’ll need a large skillet. Sometimes I use one of my cast iron skillets, while other times I use one that’s nonstick. It really doesn’t matter.
First, slice your zucchini. You can make thin spears or round slices. It’s up to you. This time, I made thin round slices so it would cook quickly.
Secondly, add the oil to the skillet and heat it on medium-high. It only takes a couple of minutes for the oil to get hot enough. Then, add the zucchini to the oil. Cook it for a couple of minutes, stirring frequently.
Next, add the garlic, basil, salt, and pepper to the zucchini. Stir while you cook this for another few minutes.
Remove the skillet from the heat and sprinkle it with Parmesan cheese. Now serve it while it’s hot. It’s good on its own or served over rice or noodles.
Baked in a Casserole
If you want to bake this in a casserole dish, you can do this. But first, cook the zucchini in the skillet to caramelize the outside for the best flavor. It always tastes better with browned edges. Then add the seasonings and stir.
Spray your baking dish with nonstick cooking spray before putting the food in it. Pour your zucchini mixture into the baking dish and sprinkle the Parmesan cheese over the top.
Now bake it for about 20 minutes on 350 degrees F. If you want it to stay hot for a while, just put a lid over the top or cover it with foil. Sometimes baking this dish is the best option if you’re taking it to a potluck. However, I like the ease of cooking it on top of the stove.

This zucchini Parmesan goes with so many different main dishes. For example, it’s delicious with these oven-fried chicken strips.
You’ll also love it with these crispy on the outside yet moist on the inside chicken thighs. They’re super easy to make in an air fryer.

Garlic Zucchini Parmesan
When you're looking for a side dish with a boatload of flavor, you'll love this garlic zucchini Parmesan.
Ingredients
- 2 medium zucchinis, sliced
- 2 tablespoons of grated Parmesan cheese
- 1 tablespoon of chopped fresh or dried basil
- 1 teaspoon of minced garlic
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Heat the oil in a large skillet over medium-high heat.
- Add the zucchini. Cook for 5 minutes, stirring frequently.
- Add the garlic, basil, salt, and pepper. Continue to cook and stir for another 5 minutes.
- Remove from the heat and sprinkle with the Parmesan cheese.
- Serve hot.
Notes
You can also put this in a casserole dish, top it with cheese, and bake it until the cheese melts.
