Wondering how to bake chicken in a cast iron skillet? Here is how I do it. In fact, the first time I ever baked chicken, the only pan I had that was big enough was a cast iron skillet. So that’s what I used.

I quickly learned that baking chicken in a cast iron skillet is a delicious and simple way to prepare a flavorful meal. The recipe outlined below combines the crispiness of pan-seared skin with the juiciness of oven-baked chicken. So whether you’re using chicken thighs or breasts, this method guarantees a savory dish that’s perfect for any occasion.
Ingredients
Here are the ingredients you need:

- 4 chicken pieces, bone-in, skin-on (thighs or breasts)
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/2 teaspoon paprika (optional)

- Garlic powder
- Onion powder
- Chili powder
- Lemon pepper
- Creole or Cajun seasoning

Directions
Before you begin, preheat your oven to 400Ëš F. A properly preheated oven ensures even cooking and helps seal in moisture.
Place a cast iron skillet on the stovetop and set the heat to medium. Add 1 tablespoon of butter and let it melt completely. I like to swirl the melted butter around the skillet to coat the entire bottom.

Sprinkle 1/2 teaspoon of salt evenly over the top of the chicken pieces. Once the butter is melted and slightly bubbling, place the chicken in the skillet skin-side down.

Let the chicken cook undisturbed for about 3 minutes or until the skin turns golden brown. Then, flip the chicken and cook for an additional 2 minutes to lightly brown the other side.

Carefully transfer the entire skillet to the preheated oven. Bake the chicken for 20 minutes, allowing it to cook through while retaining its juices.

After 20 minutes, remove the skillet from the oven and baste the chicken with the melted butter from the bottom of the pan. For extra flavor and color, sprinkle 1/2 teaspoon of paprika evenly over the chicken.

Return the skillet to the oven and continue baking for another 10 minutes, or until the chicken’s internal temperature reaches 165˚ F when measured with a meat thermometer. Proper internal temperature ensures the chicken is safe to eat without being overcooked.

Remove the skillet from the oven and let the chicken rest for about 5 minutes. Resting allows the juices to settle, keeping the meat tender, juicy, and flavorful. Serve warm with your favorite side dishes, such as roasted vegetables, creamy smooth mashed potatoes, or a fresh garden salad.

Tips for Perfect Chicken
- Before seasoning, pat the chicken dry with paper towels to help achieve a crispier skin.
- Be careful not to overcrowd the pan. If. You’re cooking a large amount of chicken, either do it in batches or use two skillets.
- In addition to paprika, try garlic powder, thyme, or lemon pepper for added flavor.
