Baked Eggs with Cheese

Simple, Delicious, and Cozy Breakfast Recipe

These baked eggs are an easy yet elegant way to prepare eggs. This is such a simple recipe that it might just become your new breakfast favorite for those times when you want to treat. Your family or guest to something special. The creamy, tender eggs, along with the deliciousness of cheese and chives, delivers lots of flavor to make breakfast a special event.

Ingredients

  • Large eggs
  • Chopped chives, dried or fresh
  • Shredded cheese (cheddar, Swiss, or Monterey Jack)
  • Salt
  • Black pepper 
  • Butter

You can add other ingredients if you like, but it’s not necessary. Baked eggs are such a special treat that you really don’t need to do anything else.

Directions

Preheat your oven to 325˚ F. Using the butter, grease 3 ramekins or mini casserole dishes to make sure the eggs don’t stick. You can use a cooking oil, but the butter adds a very rich flavor.

Carefully crack 2 eggs into each of the greased ramekins.

Sprinkle the eggs with salt, pepper, and chopped chives.

Set the ramekins in a baking pan that is large enough for all of them and deep enough to hold about an inch of water.

Pour hot water into the baking pan, around the ramekins, filling it to about 1 inch deep. This is an important step because the water bath helps to regulate the temperature and prevent the eggs from overcooking or getting tough.

Place the pan in the middle rack of your oven. Bake for 20 minutes. This helps set the eggs, but the water bath helps keep them soft.

Remove from the oven and sprinkle the shredded cheese over the top of each ramekin of eggs. Return them to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.

After they finish baking, remove them from the oven and allow them to rest for about 5 minutes before serving.

Helpful Hints

Use the freshest eggs you can find. The texture will be firmer if the eggs are fresh.

Try different types of cheese. My husband and I like cheddar, Monterey Jack, or Swiss. However, if you like stronger flavors, try parmesan or feta.

Add even more flavors with extra seasonings. Some you might want to try are caramelized onions, fresh herbs, or crispy bacon bits sprinkled over the top. For extra color, try adding chopped peppers, diced ham, or chopped roasted tomatoes.

Keep track of the cooking time. If you like a softer or runnier yolk, check the eggs 5 minutes after you add the cheese. For firmer eggs, let them back a bit longer.

About Baked Eggs

These are also called “shirred eggs.” They require very little attention since you prepare all of them and then just pop them into the oven. This gives you time to prepare other breakfast dishes without having to tend to a frying pan full of scrambled eggs.

Ingredients

  • 6 large eggs
  • 1 tablespoon chopped chives (dried or fresh)
  • 6 tablespoons shredded cheese (cheddar, Swiss, or Monterey Jack cheese)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 325˚ F. Grease 3 ramekins or mini-casserole dishes with the butter.
  2. Carefully crack 2 eggs into each of the greased ramekins
  3. Sprinkle eggs with chives.
  4. Set each of the ramekins in a baking pan that is large enough to hold all of them. 
  5. Pour hot water into the pan, around the casseroles, to about 1 inch deep.
  6. Place the pan on the middle oven rack.
  7. Bake for 20 minutes. Remove from the oven and sprinkle the shredded cheese evenly over the tops of the eggs.
  8. Return the eggs to the oven and bake for another 5 to 10 minutes or until the eggs are set and the cheese melts.
  9. Remove the pan of eggs from the oven and allow them to rest for about 5 minutes before serving.

Notes

Feel free to add bacon, ham, or any of your favorite savory seasonings to this dish.
