Banana Oat Pancakes


Quick and Delicious Breakfast Idea


These banana oat pancakes are perfect for a quick and easy breakfast that’s also delicious and filling. I love the fact that they’re packed with flavor, and they’re a gluten-free option if you use oats that are made in a gluten-free facility. They’re so simple to make that they’ve become one of our go-to recipes when we need something in a hurry.

Ingredients

You only need a few ingredients to make these delicious pancakes. Here’s what you’ll need:

  • Large banana, mashed
  • Creamy peanut butter
  • Large egg
  • Rolled oats (or quick oats)
  • Baking Powder
  • Vanilla extract
  • Butter or oil (for the skillet)

Note for a vegan version: If you are vegan, check out these directions for how to make a flax egg from Cookie and Kate. You’ll get the same results but without any animal products in the mixture. Also use vegetable oil instead of butter.

Directions

Combine all the ingredients in a medium bowl and mix well until you have a creamy smooth batter. Let the mixture rest for about 10 minutes. This allows the oats to soften and creates a fluffier texture for the pancakes.

Heat a large skillet over medium heat and melt a small amount of butter (or use a nonstick spray if you prefer a vegan option).

Scoop about 1/4 cup of batter per pancake into the skillet. You should be able to fit three pancakes at a time.

Cook the pancakes for 3-4 minutes on one side, or until bubbles start to form on the surface. Carefully flip them over and cook for another 3 minutes, or until they’re slightly puffy and golden brown.

Serve warm with a pat of butter, a drizzle of honey, or your favorite syrup. We also like fresh fruit like berries or slices of banana.

Things to Note

Simple Ingredients: You might have everything you need in your pantry or fridge.

Vegan Version: Replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water) to make these pancakes fully vegan.

Ingredients

  • 1 large banana, mashed

  5. The pancakes should start to bubble after 3 or 4 minutes. Very carefully turn them over and cook for another 3 minutes. They should be slightly puffy and lightly browned but still soft.
  6. Serve with butter and honey or your favorite syrup.

Notes

For a vegan version, substitute a flax "egg" for the egg in the recipe.
