I like to include these delicious little savory treats to the snack table at a party. They’re also good when the family is starving but dinner isn’t ready yet. Just hand each person their own plate of cucumber bites to keep their appetites at bay until dinner.
Ingredients
You only need a few ingredients to make this delicious savory treat. Here’s what you’ll need:
- Cucumbers
- Hummus (homemade or store-bought)
- Cherry tomatoes (or grape tomatoes)
- Chopped fresh dill
Instructions
Wash the cucumbers and tomatoes thoroughly. Then slice the cucumbers into 1/2 inch rounds. I make them this thick so the cucumber slices can hold the toppings without falling apart.
Slice the tomatoes in half in half. When I use cherry tomatoes, I cut them horizontally. However, this time I used grape tomatoes that are more oblong, so I cut them vertically. Now set them aside.
Next, spread about 1/2 tablespoon of hummus on each cucumber slice. The creamy texture of the hummus is a delicate balance to the crispness of the cucumber.
Now top each hummus coated cucumber slice with 1/2 of a tomato. This adds a hint of juiciness to each bite.
Garnish each cucumber bite with the chopped fresh dill. Add as much or as little as you like. I like just a little for a subtle herbal flavor without overwhelming the rest of the bite. If you don’t care for dill, you can try other fresh herbs such as parsley, basil, or cilantro.

Cucumber Bites with Hummus
Refreshing and delicious, these cucumber bites with hummus are satisfying as a snack or appetizer.
Ingredients
- 1 cucumber
- 1/2 cup hummus
- 6 cherry tomatoes
- 1 tablespoon fresh dill, chopped
Instructions
- Slice cucumbers into 1/2 inch thick rounds.
- Top each cucumber slice with about 1/2 tablespoon of hummus.
- Place a halved cherry tomato (or grape tomato) on top of the hummus.
- Garnish with chopped fresh dill.
Notes
If you want more, simply double or triple the ingredients in the recipe.
