These mint chocolate brownies are easy to make, but they taste like they came from a bakery. If you like the blend of chocolate and peppermint, you’ll love the cool and satisfying yumminess of this delicious treat.
The bonus is that these refreshingly minty brownies are super easy to make. In fact, your friends and family will think you spent hours in the kitchen making them.
We’re still staying in a rental house, waiting to close on our house. I’ll be so happy when I can unpack my own kitchen gadgets.
But I’m still thankful for the rental that has everything we actually need. I’m using the dishes that came with this house for now.
Mint Flavored Brownies
You can use any of your favorite chocolate mint candies. I used York, but another one that we like is Andes.
You can also use mint candy without chocolate. However, I think that the chocolate from the candy helps meld the flavors of the candy with the brownie mix.
Mint Chocolate Brownies Ingredients
I went the easy route and used a brownie mix. If you want to make it from scratch, I have the ingredients list below.
Here’s what you’ll need if you use a mix:
- 1 box of brownie mix prepared by following the directions on the back of the box
- Enough peppermint patty candies (York or Andes) to add a single layer in the pan between layers of brownie mix
- Can of white frosting
- Peppermint flavoring
The brownie mix I used called for eggs, oil, and water. Each mix requires a specific amount of each ingredient.
So make sure you have what you need before you begin.
How to Make Mint Chocolate Brownies
Gather all of the ingredients and measure them out. I eyeball certain things, like the mint flavoring, but if you’re not comfortable doing that, measure it out.
Preheat your oven to 325˚ F. Spray your baking pan with nonstick cooking spray to prevent the brownies from sticking.
Combine all of the ingredients to make the brownie batter.
Stir well until there are no dry clumps of mix in the bowl.
Pour half of the brownie mix into the bottom of the greased baking pan.
Spread it out to cover the entire bottom.
The lumps you see in the batter are chocolate chips that were in the mix.
Place the chocolate mint candies side by side over the first layer of batter.
After they’re all placed, gently press them down.
Pour the remaining batter over the mint candies, making sure all of them are covered. Smooth it out to make the top level.
Bake for 45 minutes or until the brownies are done. Remove the pan from the oven.
Allow the brownies to cool before icing them. They should be room temperature to prevent the icing from spreading out too much.
It’s okay if some of the mint from the candies oozes out of the sides. In fact, that makes it even better.
Mix the frosting with the peppermint flavoring. Stir well.
You can add a drop or two of green food coloring to the peppermint frosting before stirring.
Scoop the peppermint flavored frosting into a plastic sandwich bag.
Cut off one corner so you can squeeze it out over the brownies.
Drizzle it over the brownies.
If you want it smoother, you can place the bag of icing in a bowl of warm water before snipping the corner.
Cut the brownies into squares or rectangles. Enjoy!
If you want to make the brownies even more appealing, chop some of the candy and sprinkle it over the top. Or you can use any kind of candy sprinkles, including chocolate.
Brownies from Scratch
If you want to make the brownies from scratch rather than using a mix, that’s fine. It takes a little longer, and you’ll need more ingredients.
Here’s what you’ll need to make the brownie batter:
- 3/4 cup of flour (all-purpose regular or gluten-free)
- 1-1/2 cups of sugar
- 1/2 cup of vegetable oil
- 2 eggs
- 1/2 cup of cocoa
- 2 teaspoons of vanilla extract
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
Mix all of the ingredients and follow the remainder of the instructions.
You can use butter instead of oil. Just make sure to melt it first, or it’s more difficult to mix with the rest of the ingredients.
Or you can use the basic ingredient list for these brownie waffles.
Chocolate Mint with Chocolate Frosting
If you want even more chocolaty brownies, you can use chocolate frosting. The flavor will be much richer, so you may not need as many brownies to feed a bunch of people.
In order to make it stretch even more, add a dollop of vanilla ice cream over the top. If you want to make it super decadent, drizzle some of this delicious hot fudge sauce over the ice cream or sprinkle some mini chocolate chips over the top.

Easy Mint Chocolate Brownies Recipe
These easy-to-make mint chocolate brownies are refreshingly delicious. They make a great dessert of afternoon snack.
Ingredients
- 1 box of brownie mix prepared according to the directions on the box (see notes)
- 1 egg
- 1/3 cup of oil
- 1/3 cup of water
- 16 peppermint patty candies (York or Andes)
- 1 small can of white frosting
- 1 tablespoon of peppermint flavoring
Instructions
- Preheat the oven to 325˚ F. Spray the bottom of a 7” x 11” baking pan with nonstick cooking spray.
- Pour half of the brownie mixture into the pan. Place the peppermint candies on top of the brownie mixture. Cover the candies with the remaining mixture.
- Bake for 45 minutes or until the brownies are done.
- Allow the brownies to cool before drizzling the icing.
- Combine the frosting with the peppermint flavoring and mix well. Scoop this into a small plastic bag. Snip a corner off the bag so you can pipe it over the brownies.
- Drizzle the mint frosting over the brownies in whatever pattern you like.
- Cut them into squares or rectangles.
Notes
You can use regular or gluten-free brownie mix. The one I used called for 1/3 cup of oil, 1/3 cup of water, 1 egg, and a box of brownie mix. Other brownie mixes may be different.
If you want the frosting to be smoother, place the bag of frosting in a bowl of warm water for about 5 minutes before you cut the corner. That will soften it up quite a bit.
