Easy Tex Mex Salad Recipe

This Tex Mex salad is a deliciously spicy salad that you can serve as a side dish or even a main dish for lunch or dinner. You can make it as-is or add more protein if you want. I think it would be good with chopped chicken, turkey, or beef.

What is Tex Mex Salad

To me, a Tex Mex salad is a salad with strong south-of-the-border flavors. You can follow the directions on the printable recipe card at the bottom of this page or create your own with the ingredients you love.

The wonderful blend of flavors from beans, corn, and other ingredients that I have listed will make your taste buds very happy. I’ve also heard of it referred to as a Tex Mex corn salad.

I like to add it to an otherwise calm meal to liven it up a bit. It’s also good on its own or with tortilla chips. If you like stuffed avocados, try stuffing it with this Tex Mex salad.

Tex Mex Salad Ingredients

You’ll be amazed by how few ingredients you need for this flavor-packed dish. You might even have some of them on hand.

Here are the ingredients you’ll need:

  • Can of black beans
  • Chopped green onions
  • Can of whole kernel corn
  • Salsa
  • Fresh greens

As always, if there is something you’d like to change or add, go ahead and do it. Or if you’re more comfortable making the recipe as-is the first time, do that and make the adjustments the next time you make it.

I usually add a little bit of cayenne when I make it. However, my taste for extra spicy food comes and goes. We recently had something that was almost too spicy, so I didn’t add any cayenne.

We also like Tex Mex salad with avocado, either sliced and added to the salad or in this yummy classic guacamole for dipping the chips.

How to Make a Tex Mex Salad

This is a super easy recipe to make, as long as you have all of the ingredients you need. Gather them to make sure before you begin.

First, rinse and drain the beans. Once all of the water runs off, pour them into a medium-size bowl.

Secondly, add the chopped green onions.

You don’t need many, but you can add more if you like.

Next, drain the corn and add it to the mixture.

Stir all of it carefully so you don’t smush the beans.

Finally, add the salsa and fold it into the mixture.

I used a medium-hot salsa, but I normally prefer one that is smokin’ hot.

Again, I’m trying to go easy on the spice because I recently overdid it.

Scoop the mixture onto a bed of whatever greens you prefer.

We just happened to have a spring mix, so I used that. 

You can also add some ranch dressing to the greens if you like. Or you can drizzle some of this yummy copycat Taco Bell Baja sauce over it.

Make Your Own Salad Bar with Your Favorite Salad Recipes

I like to have a variety of salads in my refrigerator. That way, I can grab something quickly and either add a little protein to make a complete meal or enjoy a side salad.

Chickpea Salad – This is one you can eat as a side dish or a main dish. Chickpeas (garbanzo beans) have protein, but you can always add more.

Greek Olive and Feta Salad – The flavors in this salad are out-of-this-world delicious!

You can also include a basic salad and offer this creamy buttermilk ranch dressing or this yummy old-school thousand island dressing. Both are homemade and so much better than any you’ll find in a bottle.

Easy Tex Mex Salad Recipe

Liven up any meal with this spicy Tex Mex salad.

Ingredients

  • 1 15-ounce can of black beans
  • 1/4 cup of chopped green onions
  • 1 15 ounce can of whole kernel corn
  • 1/2 cup of salsa
  • 4 cups of fresh greens (romaine, spinach, endive, or whatever you prefer)

Instructions

  1. Drain and rinse the entire can of black beans. Pour it into a medium-size bowl.
  2. Add the chopped green onions.
  3. Drain the can of corn and add it to the black beans and onions.
  4. Give the mixture a quick stir.
  5. Add the salsa and fold it into the mixture. Be careful not to mash any of the beans.
  6. Scoop the mixture over the greens.
