This chicken and vegetable dinner is not only a balanced meal, but it is also delicious. Additionally, it’s the perfect family dinner at the end of a long day.
I’ve always enjoyed coming home to a slow cooker meal. That little kitchen gadget is one of the best purchases I’ve ever made for a number of reasons.
First of all, it’s nice on those days when I want a hearty meal without a lot of effort. Simply put stuff into the pot, turn it on, and a few hours later, dinner is done.
Secondly, you only have one pot to clean most of the time. At least that’s the case if you cook everything in the slow cooker. However, even when you cook rice or something else on the side, it’s still not bad.
Third, it is the best meat tenderizer around. When you cook meat in the slow cooker, it’s fall-off-the-bone tender.
Ingredients
You need chicken thighs, green beans, potatoes, onion slices, tomato sauce, garlic, and Italian seasoning.
Although I like to add chicken broth, you can add water instead. You don’t need much—just enough to keep everything moist.
How to Make a Chicken and Vegetable Dinner
It’s super easy to make this dinner. All you have to do is layer everything in the pot. Then put on the lid, plug it in, and turn it on.

Start out by putting the chicken thighs in the bottom of a greased pot. I always spray the slow cooker with nonstick spray because it’s easier to clean afterward.
Place the onion slices on top of the chicken.
The next layer is the green beans.
Afterward, add the potatoes.
Then add some garlic and pour the tomato sauce over everything. Last, add the seasonings and broth (or water).
Put on the lid, plug it in, and turn the heat on low.
Cook for 6 hours, and then you have a delicious dinner.

I love cooking in my slow cooker. In fact, I actually prefer this method of cooking at least one or two meals a week.
It’s just good to know that if I get busy late in the afternoon, that’s okay. Dinner will still be ready at a decent time.

This slow cooker chicken and vegetable dinner is easy and delicious.
Ingredients
- 4 chicken thighs
- 1 pack of frozen green beans
- 10 small potatoes cut in half
- 1/2 onion, sliced into rings
- 1 small can of tomato sauce
- 1/2 cup of chicken broth or water
- 1/2 teaspoon of minced garlic
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
Instructions
- Place chicken in the bottom of the slow cooker.
- Add a layer of onions, a layer of green beans, and a layer of potatoes.
- Pour the tomato sauce and broth (or water) over everything.
- Sprinkle the garlic, Italian seasoning, salt, and pepper over the contents of the slow cooker.
- Put on the lid and cook on low for 6 hours.
