These Mexican ground beef patties are absolutely delicious. Not only do they satisfy your craving for Tex Mex flavor, but they are also great comfort food. You don’t need a lot of ingredients to make this wonderfully easy ground beef recipe. But you can add more seasonings to suit your taste.
As the name implies, you basically just need the meat, a can of Ro-Tel, and some cheese. And you can add salt or any of your favorite seasonings for even more flavor! This delicious dish pairs well with your favorite corn or rice dish! We especially enjoy serving it with corn casserole.
Quick and Easy Mexican Ground Beef Patties Recipe
This yummy dish is also low carb. You can either add sides with carbs if you want or choose a salad or other sides that are also low carb. Of all the ground beef recipes I make, this is one of the easiest and most flavorful. I’ve made it a variety of ways, from only having the basic ingredients to adding more seasoning.
Ingredients
You only need 3 ingredients to make this basic recipe. Here is what you’ll need:
- 2 ground beef patties
- One 10 ounce can of Rotel tomatoes
- 4 cheese slices (mozzarella, pepperjack, or provolone)
Sometimes I form patties from packs of ground beef. However, this time, I used one of the pre-formed patties that you can get at Costco or Sam’s Club. I like to keep them in my freezer for those times when I need something quick and easy.
How to Make Mexican Ground Beef Patties with Ro-Tel
I try to keep things as easy as possible. And since I have an air fryer, I use that to brown the ground beef patties. However, if you don’t have an air fryer, you can either brown them in your skillet on the stovetop or put them in the oven. So first, brown the hamburger patties whatever way you choose.
Next, pour the Ro-tel tomatoes into a pan and put it on the stove on medium-high heat.
As soon as the tomatoes start to bubble, turn the heat down to medium-low. Now feel free to add any other seasonings you like and stir them in. Most of the time, I sprinkle in some chili powder and a dash of cinnamon.
On occasion, I add onions and peppers that I’ve prepped and frozen. This time, I didn’t. Next, place the browned hamburger patties in the pan with the Ro-tel. Spoon the tomatoes over the beef.
Allow the patties to simmer in the tomatoes for about 10 minutes. Carefully place slices of cheese over each of the patties.
Cover the pan to help the cheese melt quickly. That should only take a couple of minutes. With a large spatula, transfer the cheese-covered patties to each person’s plate. Add whatever sides you’ve chosen and serve.
Alternate Ingredients
We like provolone cheese, Monterey jack or sharp cheddar cheese with ours. However, if you have another preference, go right ahead and use it. If you don’t have Rotel tomatoes, you can use diced tomatoes. I like to add either homemade taco seasoning, jarred taco seasoning, or even chili powder.
Although this calls for ground beef patties, you can swap them out for other types of ground meat, such as turkey or pork. Here are other ingredients you might want to add:
- Chili seasoning
- Cinnamon (just a dash)
- Onion powder
- Garlic powder
- Diced bell pepper
- Green chilies
- Diced onion
What to Serve with Your Mexican Ground Beef Patties
This is a meal that you can take in any number of directions. You can keep it mild and serve it with mashed potatoes. Or you can go full-on Tex Mex with yellow rice and black beans.

Mexican Ground Beef Patties with Ro-Tel
When you want a quick meal but don't have much time, make these delicious and easy Mexican ground beef patties with Ro-Tel.
Ingredients
- 2 ground beef patties (1/4 pound each)
- 1 can Rotel tomatoes (10 ounce can)
- 4 slices cheese (provolone, jack, or cheddar)
Instructions
- Brown the hamburger patties in your air fryer, in a skillet, or in the oven.
- Pour the entire can of Ro-tel tomatoes into a pan on the stovetop and turn the burner on medium high heat. After the tomatoes come to a boil, turn the heat down to medium-low.
- If you want to add other seasonings or spices, do it now.
- Place the ground beef patties in the skillet with the Ro-tel. Spoon the tomatoes over the beef.
- Simmer for about 10 minutes.
- Carefully put slices of cheese over each of the patties. Cover the pan to hold in the heat so the cheese will melt quickly. This should take about 2 minutes.
- Using a large spatula, transfer the patties to each person’s plate.
Notes
If you want to double the recipe, simply double the amount of all of the ingredients.
