Ingredients
- Pork chops (3/4 inches thick)
- Balsamic vinegar
- Dijon Mustard

Directions
Make the marinade by mixing the balsamic vinegar, Dijon mustard, lemon juice, olive oil, minced garlic, fresh rosemary leaves, salt, and pepper in a medium bowl. After you make this the first time, feel free to adjust the amount of each ingredient to suit your taste.
Place the pork chops in a shallow pan and pour the marinade evenly over the meat. Make sure all of the meat is covered. Cover the pan and refrigerate for at least an hour. Flip the pork chops and spoon the marinade over them. Cover and refrigerate another hour. If you have time, you can marinate the pork chops longer.
Heat a large skillet over medium-high heat and melt the butter. Add the marinated pork chops to the hot skillet. Sear each side for about 2 minutes to lock in the juices and add a golden-brown crust.

Lower the heat to medium-low and cover the skillet with a lid. Cook the pork chops for 20-25 minutes or until they reach an internal temperature of 150Ëš F. This allows the pork chops cook evenly throughout, while they absorb all of the flavors from the marinade.
After the pork chops are done, remove them from the heat and allow them to rest for about 10 minutes. This helps the juices to remain in the pork chops, helping them to stay juicy and flavorful.
Helpful Tips
Use fresh rosemary for the best flavor. If you don’t have fresh rosemary, you can use dried rosemary. However, the flavor won’t be as vibrant.

- Turn the heat down to medium-low and cover. Cook for 20-25 minutes or until the internal temperature reaches 150˚ F.
- Remove from the heat and allow the pork chops to rest for about 10 minutes before serving.
