These seasoned roasted cabbage steaks are so delicious they’ve become one of my favorite vegetables. They’re particularly good when they’re seasoned just right.
Cabbage isn’t typically the first vegetable that comes to mind when you’re thinking about sides. However, once you try these delectable roasted slices of cabbage that might change. In fact, I suspect it will become one of your favorite foods.
Benefits of Cabbage
According to Medical News Today, cabbage is packed with quite a few nutrients and fiber that keep you healthy and feeling great. In addition to having a cancer-fighting compound, cabbage also contains vitamin K, magnesium, folate, and many other beneficial nutrients.
Cabbage also has choline, beta-carotene, lutein, and flavonoids. In other words, it’s very good for you.
Seasoned Roasted Cabbage Steaks Ingredients
Of course, you’ll need a head of cabbage sliced into 1/2” rounds. For drizzling, you’ll need olive oil, garlic powder, onion powder, and seasoned salt.
I also added smoked paprika and bacon bits because I love the extra flavor. However, you don’t have to add a thing because they’re good as-is.
Instead of olive oil, you might prefer melted butter. Or you can do a mixture of the two. Remember that this is all about creating a dish with the flavors you and your family love. So if you like the taste of butter, go for it. Roasting enhances the flavor of all vegetables, including cabbage and this delicious roasted cauliflower.

How to Make Seasoned Roasted Cabbage Steaks
First of all, you’ll need to remove the outer leaves from the cabbage, or they’ll fall off. So you might as well get rid of them before that happens.
Leave the core intact because it holds the slices together. Otherwise, they’ll fall apart.
Next, slice the cabbage into 1/2″ round—or as close as you can get to that. I have to admit that some of the ones I typically make are almost twice that thickness. But it really doesn’t matter.
In a small bowl, combine the olive oil with all of the seasonings. Stir them until they’re well mixed.
Then drizzle half of the olive oil mixture over the cabbage steaks. Or you may brush it on if you like.
Bake for about 20 minutes. Carefully turn them over and drizzle the remaining olive oil mixture over the other side of the cabbage steaks.
Return them to the oven for another 20 minutes or until the cabbage is tender. If you want them browner on top, you may broil them for a couple of minutes.
After you remove the seasoned roasted cabbage steaks from the oven, sprinkle bacon bits and parsley flakes over them. Or garnish them however you like.

Seasoned Roasted Cabbage Steaks
These seasoned roasted cabbage steaks are a delicious side dish for any meal.
Ingredients
- 1 head of cabbage cut into 1/2” slices
- 1/3 cup of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- Seasoned salt to taste
- 1/2 teaspoon of smoked paprika (optional)
- 1 tablespoon of bacon bits (optional)
Instructions
- Preheat oven to 400 degrees. Cover a baking sheet with foil and spray it with nonstick cooking spray.
- Mix the olive oil and seasonings in a small bowl.
- Place the cabbage slices on the baking sheet. Drizzle half of the seasoned olive oil over the cabbage slices.
- Place the sheet of cabbage in the oven and cook for 20 minutes.
- Turn the cabbage slices over and drizzle with the remaining seasoned olive oil.
- Return to the oven for 20 more minutes or until the cabbage is tender.
Notes
You can try a variety of seasonings, depending on what you like. Some that are good include Italian seasoning, chili powder, and sriracha.
If you like cheese, you can sprinkle shredded or grated cheese over the cabbage slices after they’re done and return them to the oven for another 5 minutes for the cheese to melt.
You may garnish your roasted cabbage steaks with either chopped fresh herbs or dried ones.
