Easy Crockpot Mississippi Pot Roast

Delicious Slow Cooker Dinner

This Crockpot Mississippi pot roast is a big hit at our house. My husband always asks for seconds when I serve it. It’s an easy dinner to make in your slow cooker, so you can go about your busy day while the main part of your dinner is cooking. It’s also low carb on its own.

This is delicious on the day it’s cooked. But it also makes wonderful leftovers! There are so many different ways to serve it!

The last time I cooked it I served it over mashed potatoes with a side of green beans. Then the next day, I wrapped it in a tortilla with a side of salsa.

You can add whatever sauce you like to change the flavor. For example, barbecue sauce and a steamed or toasted bun give you flavor that would rival any smokehouse.

Ingredients Needed for Mississippi Pot Roast

Of course, you’ll need a roast. So I used a 2-pound roast that I picked up at Publix when it was on sale.

The other ingredients are onion soup mix, ranch dressing mix, butter, pepperoncini peppers, and a tiny bit of water. You can add other seasonings, but it’s not necessary. I think it’s so good as it is.

How to Make Crockpot Mississippi Pot Roast

I always spray the inside of the slow cooker pot before I use it because it makes cleanup easy. Position the roast in the center of the pot. Sprinkle the onion soup and ranch dressing mix over the roast.

Place the stick of butter smack dab in the center on top of the roast. It will drizzle down the meat as it cooks, adding a deliciously rich flavor.

Add the pepperoncini peppers and water to the pot. Then put the lid on and cook it until the roast is fork tender.

I used two forks to shred it. But if you have meat-shredding claws, use those.

Give the contents of the pot a good stir to make sure all of the deliciousness is evenly distributed.

Variations and Tips

  • You can use any cut of beef for this recipe. It’s also good with stew meat.
  • If you’re cooking for a large group, you can double all of the ingredients in the recipe.
  • Feel free to swap out the type of pepper. Instead of pepperoncini, try jalapeño or bell pepper, depending on how much heat you want.

Leftover Storage and Reheating

If you have leftover pot roast, simply put it in an airtight container and put it in the refrigerator. It should be good for 3 or 4 days.

Or you can freeze it for a couple of months. Just don’t forget to label the container with the contents and date.

I like to reheat leftovers in the microwave, one serving at a time. Another method is to put it in a covered saucepan and heat on medium-low until it reaches the desired temperature.

What to Serve with Mississippi Pot Roast

We enjoy this pot roast with a variety of sides, from buttermilk garlic mashed potatoes to flavorful onion-seasoned rice.

Add a side of either air fried frozen green beans or enhanced canned green beans, and you have a wonderful meal!

My family also thinks this creamed spinach is delicious, and from what I’ve heard it’s a big hit with a lot of other folks. You should also try these delightful roasted cabbage steaks. Roasting brings out the sweetness of vegetables.

If you want a salad, try this creamy coleslaw or simple Greek olive and feta salad that’ll send your taste buds into orbit.

Ingredients

  • 2 pound roast beef
  • 1 package of onion soup mix
  • 1 package of ranch dressing mix
  • 1/4 cup of butter
  • 8 pepperoncini peppers
  • 1/4 cup of water

Instructions

    1. Spray the inside of your slow cooker pot with nonstick cooking spray.
    2. Put the roast in the center of the pot.
    3. Sprinkle the onion soup mix and ranch dressing mix over the top of the roast.
    4. Place the butter on top of the roast.
    5. Add the pepperoncini peppers to the pot.
    6. Pour the water around the edges and cover.
    7. Turn the slow cooker on high for one hour. Then turn it down to low and allow it to cook for 6-8 hours.
    8. Using 2 forks shred the roast. Stir it with the peppers and liquid.
    9. Serve the shredded roast over mashed potatoes, rice, or on a bun.
