If you like comfort food, you’ll love these family dinner casseroles. When the day has been long and everyone’s hungry, easy casserole dinners come to the rescue. These easy weeknight family dinner casseroles are simple to prepare, hearty, and full of comforting flavor. 

I’ve been making casseroles for more than 50 years because they’re easy, and they provide comfort at the end of a busy day. Many of these started out as recipes I adapted from popular recipes, while others began as hopeful experiments in my home kitchen.

Here you’ll find some recipes with chicken, some with beef, a few with seafood, and others without any meat. I often serve a salad with my casseroles, but most of the time that’s not necessary. You can also offer bread along with some delicious but easy homemade butter.

Since I have a gluten sensitivity, most of my recipes are gluten-free, or at least adaptable. Here you’ll find a bunch of my favorite gluten-free casserole recipes. If you’re used to cooking gluten-free food, you probably know how to adapt recipes. But just in case you don’t, I offer suggestions and tips.

I’ve also compiled a list of my favorite summer casseroles. Most of these are perfect for outdoor church potlucks or summer get-togethers with friends.

Although most of them can be classified as a main dish, some make excellent side dishes. Regardless, they’re all easy and absolutely delicious!

With minimal fuss and plenty of goodness in every bite, they make gathering around the dinner table something everyone looks forward to. They’re also good to bring to potluck dinners and serve when you host a buffet.

Chicken Casseroles

Chicken casseroles are a weeknight dinner favorite for good reason. I love how easy chicken is to work with. It’s also budget-friendly and pairs well with all kinds of comforting ingredients like rice, pasta, cheese, and vegetables. 

Whether you’re using leftover chicken or starting with a rotisserie chicken, these casseroles come together easily and deliver a hearty meal the whole family will happily gather around the table to enjoy.

Any of the above recipes can be doubled or tripled. Or if you want to cut them in half, that’s fine too. Just make sure you adjust the amount of all ingredients as well as the size of the baking pan.

I often pick up a rotisserie chicken from the grocery store to make weeknight dinners as easy as possible. One chicken used to be the foundation for two family meals when my daughters were living with us.

But now that they’re grown, we get about four meals out of one. I divide and freeze what I won’t be using that week.

Casseroles with Meat

Meat casseroles are hearty, satisfying, and perfect for feeding a hungry family. Whether they’re made with ground beef, sausage, ham, or other flavorful meats, these dishes bring plenty of comfort to the dinner table.

Most of the recipes listed above are baked in the oven. However, there is one that is cooked in a pan on the stovetop, and I consider that a casserole.
